Ingredients
  

  • 2 cups blanched almond flour
  • 1 tablespoon baking powder (aluminum-free)
  • 1/2 teaspoon fine sea salt
  • 2 cups shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese, cubed
  • 2 large eggs (plus 1 extra egg for egg wash, optional)
  • 1–2 tablespoons Everything Bagel seasoning, plus more for topping
  • 1 teaspoon apple cider vinegar (optional, for extra lift)
  • Olive oil or melted butter for brushing (optional)

Method
 

  1. Preheat and prep: Heat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk almond flour, baking powder, and salt until well combined.
  3. Melt the cheeses: Add mozzarella and cream cheese to a microwave-safe bowl. Microwave in 30-second bursts, stirring in between, until fully melted and smooth (about 1–2 minutes total). Alternatively, melt gently on the stove.
  4. Combine wet and dry: Add the melted cheese to the dry ingredients along with 2 eggs, vinegar (if using), and 1 tablespoon Everything Bagel seasoning. Mix with a sturdy spatula, then knead by hand until a smooth dough forms. If it’s sticky, let it rest 2–3 minutes.
  5. Shape the rolls: Lightly oil your hands. Divide dough into 8 equal pieces and roll into balls. Place on the lined baking sheet, spacing them about 2 inches apart.
  6. Add the topping: Whisk the extra egg for an egg wash and brush the tops. Sprinkle generously with more Everything Bagel seasoning. For extra sheen, brush with a little olive oil or melted butter first.
  7. Bake: Bake 16–20 minutes, until the tops are golden and the rolls feel set. If browning too quickly, tent loosely with foil during the last few minutes.
  8. Cool slightly: Let the rolls rest 10 minutes before slicing. They firm up as they cool.
