Ingredients
  

  • 1 1/2 cups shredded low-moisture mozzarella cheese
  • 2 oz cream cheese, softened
  • 1 large egg
  • 1 cup blanched almond flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1 tablespoon melted butter or olive oil (for brushing)
  • Sesame seeds or everything bagel seasoning for topping (optional)

Method
 

  1. Preheat the oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk almond flour, baking powder, salt, garlic powder, and onion powder.
  3. Melt the cheeses: In a microwave-safe bowl, add mozzarella and cream cheese. Microwave 60–90 seconds, stirring halfway, until smooth and stretchy. Alternatively, melt gently in a saucepan over low heat.
  4. Add the egg: Stir the egg into the warm cheese mixture until mostly combined. It may look streaky—this is normal.
  5. Form the dough: Add the dry mix to the cheese mixture. Knead with a spatula or your hands (lightly oiled) until you get a cohesive dough. If it’s too sticky, let it sit 2–3 minutes to firm up.
  6. Shape the rolls: Divide into 6–8 equal pieces. Roll into balls and place on the lined sheet. Brush tops with melted butter or oil and sprinkle with seeds if using.
  7. Bake: 12–15 minutes, until puffed and golden brown. The bottoms should be set and lightly browned.
  8. Cool briefly: Let rest 5–10 minutes before slicing or serving. They firm up as they cool.
