Stir the base: In a medium bowl, mix 1 cup creamy peanut butter, 1/3 cup honey (or maple syrup), 1 teaspoon vanilla, and a pinch of salt until smooth.
Add the dry ingredients: Stir in 2 cups rolled oats, 1–2 tablespoons chia seeds or ground flax (optional), and 1/2 teaspoon cinnamon. Fold in 1/3 cup mini chocolate chips if using.
Check the texture: The mixture should be thick and slightly sticky, not crumbly.
If it’s too dry, add 1–2 teaspoons more honey. If it’s too sticky, sprinkle in a bit more oats.
Chill briefly: Place the bowl in the fridge for 10–15 minutes. This firms the mixture and makes rolling easier.
Roll into bites: Scoop about 1 tablespoon at a time and roll into balls.
Aim for 18–24 small bites.
Set and store: Arrange on a parchment-lined plate and chill for 20 minutes before transferring to an airtight container.
