Ingredients
  

  • Old-fashioned rolled oats (not quick oats)
  • Creamy peanut butter (natural or regular)
  • Honey or maple syrup
  • Vanilla extract
  • Cinnamon (optional but great)
  • Mini chocolate chips or chopped dark chocolate (optional)
  • Chia seeds or ground flaxseed (optional for extra fiber)
  • Fine sea salt

Method
 

  1. Stir the base: In a medium bowl, mix 1 cup creamy peanut butter, 1/3 cup honey (or maple syrup), 1 teaspoon vanilla, and a pinch of salt until smooth.
  2. Add the dry ingredients: Stir in 2 cups rolled oats, 1–2 tablespoons chia seeds or ground flax (optional), and 1/2 teaspoon cinnamon. Fold in 1/3 cup mini chocolate chips if using.
  3. Check the texture: The mixture should be thick and slightly sticky, not crumbly. If it’s too dry, add 1–2 teaspoons more honey. If it’s too sticky, sprinkle in a bit more oats.
  4. Chill briefly: Place the bowl in the fridge for 10–15 minutes. This firms the mixture and makes rolling easier.
  5. Roll into bites: Scoop about 1 tablespoon at a time and roll into balls. Aim for 18–24 small bites.
  6. Set and store: Arrange on a parchment-lined plate and chill for 20 minutes before transferring to an airtight container.
